Inland, the plate is built on maize: ugali stiff enough to hold its shape, torn by hand and used to scoop braised greens, beans and charcoal-grilled meat, with salt, onion and tomato doing most of the seasoning work. On the coast, the Swahili kitchen has traded with Arabia, Persia and India for a thousand years and cooks accordingly — coconut milk in nearly every savoury pot, tamarind for sourness, whole cardamom, cumin, cinnamon and clove toasted into rice. Neither half is a diluted version of the other; they are two cuisines sharing a country and a language. What they hold in common is a preference for slow heat and few ingredients handled properly: onions browned far past golden, meat cooked over charcoal until it yields, greens fried rather than boiled into submission, and a sharp raw tomato-onion relish on the table to cut through everything else.","Maize is the spine of the inland kitchen, and it arrived relatively late. Sorghum, millet and finger millet fed the highlands for centuries before maize spread across East Africa and, by the colonial period, became the crop that people planted, milled and ate daily. Today the white maize flour called unga is ground fine for ugali and left coarse for porridge, while whole dried kernels are boiled soft for githeri and pounded into mukimo. A Kenyan cook judges maize meal by how it behaves in the pot: good unga swells and pulls cleanly from the sides, poor unga stays slack no matter how long you stir.\n\nThe second constant is the jiko, the small charcoal brazier that sits outside kitchens, behind butcheries and at the edge of every roadside market. Charcoal is not a flavour add-on here but the ordinary cooking fire, which is why so much Kenyan meat is grilled slowly rather than seared fast, and why nyama choma and mutura taste of smoke without any smoking technique being involved. Meat is usually bought by the kilo from a butchery that grills it for you, then chopped on a wooden board and eaten with fingers.\n\nOn the Swahili coast the pantry changes completely. Fresh coconut is grated on a low stool with a serrated blade — the mbuzi — and squeezed twice, the thick first press saved to finish a sauce and the thin second press used to cook rice or braise fish. Tamarind pulp supplies acidity where an inland cook would reach for a raw tomato. Cloves, cardamom, cumin and cinnamon come out of the same Indian Ocean trade that shaped Zanzibar, and they are toasted and ground into pilau masala rather than shaken from a jar.\n\nMeal structure is straightforward and starch-led. A main plate carries one starch — ugali, rice, chapati or boiled potatoes — with a stew or grilled meat and almost always a vegetable side of sukuma wiki or cabbage. Kachumbari, the diced tomato, onion, chilli and coriander salad, is less a salad than a condiment: raw, sour and salty, it does the job that pickles do elsewhere. Beans and pulses carry most meals in households where meat is a weekend thing.\n\nRegional habits diverge sharply. Central Kenya, Kikuyu country, favours mashed and mixed dishes built from potato, maize, beans and greens. Western Kenya and the Luo and Luhya communities around Lake Victoria eat far more freshwater fish, especially tilapia and the small dried omena. The northern rangelands are pastoralist and meat-and-milk based, with camel and goat outweighing anything grown. Grilled meat comes to the table already chopped on its board and everyone picks from the same pile, which makes nyama choma a social event rather than a portioned dish. Sharing is normal and refusing food outright is awkward, so a small taste is the polite answer. Chai — black tea boiled with milk, sugar and often ginger — is offered to visitors at almost any hour and belongs between meals rather than during them.
