But the dumpling is only half the dish: every momo arrives with achar, a roasted tomato sauce ground with sesame and dried chile, and Nepalis judge a momo shop on the achar first.","Momo came into Nepal along the trade routes over the Himalaya, carried by Newar merchants who ran the Kathmandu–Lhasa trade and by Tibetan communities settled across the hills.
