Milk reduced by evaporation and loaded with sugar until it is thick and pourable, shelf-stable and intensely sweet. It sweetens and lightens Vietnamese iced coffee, thickens Thai tea, sets Brazilian brigadeiro and Latin American flan and tres leches, and cooks down into dulce de leche if you simmer the sealed tin. It is not interchangeable with evaporated milk, which is unsweetened. Because it already carries so much sugar, recipes using it usually need no additional sweetener at all.
