Long before "plant-based" was a category, half the world was cooking this way — by religious calendar, by economy, or simply by tradition. Orthodox fasting cuisine across the Balkans and Eastern Europe produced hundreds of dishes without meat, dairy or eggs; Middle Eastern and Mediterranean tables run deep with dishes of legumes, olive oil and vegetables; much of East and Southeast Asian cooking is built on soy, rice and vegetables with no dairy in the culinary language at all. The recipes collected here are naturally vegan as traditionally made, not converted — because a dish designed around beans and olive oil from the start beats a dish with the butter swapped out every single time.
